Quick Summer grilled chicken recipe
Hi Everyone! It's Summer & let's face food just tastes better on the grill!
Here is a great quick idea for grilled chicken that does not break the bank & will give you some great leftovers for some quick meals.
At the grocery market pick up a bag or two of frozen boneless chicken breast. These bags are about 40-48 ounces of flash frozen breast meat. They range in price between $8 - $12 & contain about 6-8 breasts. Defrost the chicken in cold water in a large pot. I'm one for food safety so change the water every 30-40 minutes until they are completely defrosted. While your grill is heating up, trim any excess fat from the breasts & then season each side with Onion powder, paprika, garlic powder, black pepper, oregano & basil. Add or subtract any of these spices to taste.
Grill both side of the chicken until cooked. You can cut one of the breasts open to make sure that it is completely cooked. The chicken will be tender & juicy & is great served with some baked beans & corn on the cob. Any leftover breast can be used to make your favorite chicken salad, or cut them into strips & add to a garden salad. Enjoy!
